For a bunch of people that only want organic food, we are HAPPY to have gotten our first deer. We processed it ourselves, I made some of into Italian Sausage and some Breakfast Sausage, we have roasts and steaks. It is so, so good! It happens to be a deer that has been eating a lot of our garden food, so it is not gamey at all, just wholesome deliciousness! Here is a picture of the heart, which we ate. It so happened that I had a huge beet that I had cooked up, it was in the fridge, so it was cold, as was the heart. Cutting into them, they were identical in texture, size and feel!! It was so weird!
